Lyrico
It is produced from selected Glera grapes from the most exposed vineyards and oldest vines. The grapes are dried on racks and checked daily to prevent mold growth. Between mid-January and mid-February, the dried grapes are pressed, yielding a thick juice reminiscent of honey. The extremely slow fermentation continues until summer, after which it is left to mature for a very long period. This gives the wine a particularly persuasive and enveloping bouquet while the flavor is generous and persistent.
It excels both as a dessert wine and as a meditation wine. Tradition pairs it with dry biscuits and tarts in general, but it also creates a pleasant pairing with blue or aged cheeses.

Pairings
Excellent dessert wine. Traditionally served at the end of the meal with dry biscuits. Due to its pleasant "cleansing" sensation, it pairs well with apple pies and pear tarts with Chantilly cream. Also excellent when paired with blue or aged cheeses.
