Sior

CABERNET VENETO IGT

The “Sior” was the “Lord”, the “Master” to whom the best part of the harvest was delivered. For wines, the Lord preferred those with red berries because they were more long-lasting and full-bodied, particularly cabernet, the noble grape variety par excellence.

The soils of the Piave area, due to their characteristics, are excellently suited to being the ideal home for this grape variety. In these areas, the particular pedoclimatic characteristics give the grapes a rich and intense bouquet. The vineyards have a high density of plants per hectare to ensure low yields per vine.

The harvest was carried out with hand-picked selection in early October, the grapes were crushed whole, and the must fermented for about 10 days at a temperature of 26°C. Maturation took place in 30 hl oak barrels for about 12 months. This time in wood made the tannins particularly soft, giving the wine a velvety taste, balance, and pleasantness. Additionally, the wine is enriched with a small percentage of dried Cabernet, which gives the product a broader and more particular complexity, as well as more intense aromas and fragrances.
